Inspired by an episode of Everyday Gourmet (Crunchy Spiced Granola Clusters), I have whipped up a new Sandalwood Nut Recipe; Granola with Roasted Sandalwood Nuts!
MELT
100g butter, 1/3 cup honey, 1 teaspoon all spice, grated skin of 1 orange. Microwave is fine.
COMBINE DRY
4 cups oats & 100g Roasted Sandalwood nuts with: 100g banana chips, 1.5 cups dried apricots, 100g other nuts (walnuts, almonds etc), 1/2 cup pepitas (or other favourite seeds) and more fruits and nuts if desired.
*The composition of the nuts and fruit is really a matter of preference and convenience! It all depends on what you have in your pantry. Other ingredients you could use are: coconut slivers, almond slivers, dried sultanas, prunes, apple, pear, sunflower seeds, chia seeds, and anything else you could possibly think of!
MIX
Dry and wet items until completely coated.

FLATTEN
Mixture onto shallow baking tray (line with baking paper). Press mixture down.
BAKE
In pre-heated oven at 150 degrees celsius for 20 minutes or until golden brown.
Let mixture cool in the trays then break up and store in airtight container!
